Baked vegetables with lemon and herbs
Ingredients
- Garlic 10 cloves
- Potatoes 3 pieces
- Carrots 2 pieces
- Fennel 2 pieces
- Pumpkin 1 piece
- Red Onion 1 head
- Lemon 1 piece
- Olive Oil 10 fl oz
- Thyme leaves to taste
- Rosemary 2 tablespoons
- Ginger Root 1 piece
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 220˚C.
Step 2
Combine whole cloves of garlic, potatoes, carrots, fennel, pumpkin, sweet potato, onion, and lemon in a large bowl.
Step 3
Mix the garlic paste, oil, thyme, rosemary, and ginger in a small bowl; pour over the vegetables, season with salt and pepper, and toss.
Step 4
Spread the vegetables across 2 rimmed baking sheets and bake for 1 hour 20 minutes until golden brown and tender, swapping the sheets and stirring the vegetables halfway through.
