Baked veal liver with apple-onion sauce

Ingredients

  • Onion 2 heads
  • Butter 1 tablespoon
  • Apple 4 pieces
  • Sugar ½ teaspoon
  • Salt to taste
  • Ground Black Pepper to taste
  • Potato 20 oz
  • Chicken Broth 7 tablespoons
  • Herbs 1 bunch
  • Horseradish Leaves 0 oz
  • Vegetable Oil to taste
  • Veal Liver 4 pieces
  • Marjoram to taste

Step-by-Step Guide

Step 1

Cut the apples in half and remove the core. Set aside half of the apples, and chop the remaining ones into small cubes and place them in a bowl. Add finely chopped onion. Mix well.

Step 2

Melt the butter in a pan over medium heat. Add the onion-apple mixture, season with salt and pepper. Sauté lightly and pour in the broth. Bring to a boil, reduce to low heat, cover, and simmer for 10 minutes until the apples are soft. Then add finely chopped herbs and horseradish. Mix well and remove from heat.

Step 3

Using a mandoline, slice the potatoes into thin rounds.

Preheat the oven to 390°F.

Step 5

Heat vegetable oil in a pan over medium heat and add the liver. Sear for 1 minute on each side. Season with salt and pepper and transfer to a greased baking dish. Top with the apple-onion mixture and place in the oven for 10 minutes.

Step 6

Meanwhile, heat a large amount of vegetable oil to 375°F. Fry the potato chips in batches until golden and crispy. Drain on paper towels, season with salt and pepper.

Step 7

Arrange the liver on plates, place the chips alongside, and sprinkle with marjoram.
