Ingredients
- Sea Bass 1 piece
- New Potatoes 2 pieces
- Garlic 1 clove
- Chopped Sage Leaves 2 spoons
- Olive Oil 2 spoons
- Bay leaf 1 piece
Step-by-Step Guide
Step 1
Wash the young potatoes and place them in salted water to boil.
Step 2
Clean the fish. Rinse it. Gut it along the spine.
Step 3
Season with salt and pepper, and drizzle olive oil on each side. Place bay leaves and a couple of thyme sprigs on a baking sheet. Lay the fish on top and transfer to a preheated oven at 410°F for 15-20 minutes. The cooking time may vary depending on the size of the fish.
Step 4
Heat the olive oil in a skillet, then add the halved garlic. Allow it to share its aroma with the oil. After that, sprinkle in a pinch of dried thyme, salt, and chopped parsley.
Step 5
In the meantime, the potatoes will have cooked. Drain the water and mash them slightly with a spoon without turning them into puree. Then, add the butter along with all its contents to the potatoes and mix thoroughly. This will be your side dish.
Step 6
Arrange the fish on plates and drizzle it with the juices from the baking tray. Sprinkle the remaining parsley over the potatoes.
