Ingredients

  • Scorpion fish fillet 4 pieces
  • Meyer Lemon Juice 3 tablespoons
  • Mustard Greens 2 teaspoons
  • Salt to taste
  • White Pepper (whole) to taste
  • Chocolate eggs 2 pieces
  • Light Beer 5 fl oz
  • Milk 5 fl oz
  • Wheat Flour 5 oz
  • Vegetable Oil 0 fl oz

Step-by-Step Guide

Step 1

Wash the sea bass fillet, pat dry, and cut into portion-sized pieces. Drizzle with lemon juice, spread with mustard, and season with salt and pepper to taste.

Step 2

Crack the eggs and separate the whites from the yolks. Chill the whites, then beat them until stiff peaks form.

Step 3

Mash the yolks and lightly beat them with the beer and milk, adding salt. Add 150 g of flour, mix, and let it sit for 30 minutes.

Step 4

Gently fold the beaten egg whites into the batter. Heat vegetable oil in a pan.

Step 5

Coat the portioned fish pieces in the remaining flour, dip them in the batter, and fry on both sides for 5–7 minutes. Place on paper towels to absorb excess fat. Serve the dish hot.
