  • Yellow Cherry Tomatoes 0 lbs
  • Onion ½ head
  • Orange zest 2 pieces
  • Garlic 2 cloves
  • Olive Oil 1 tablespoon
  • Pitted olives 0.3 cup
  • Dried Rosemary 1 tablespoon
  • Salt to taste
  • Ground Black Pepper to taste
  • Smoked haddock fillet 20 oz

Step-by-Step Guide

Step 1

Preheat the oven to 390°F.

Step 2

In a baking dish, layer the sliced tomatoes, thinly sliced onion, julienned orange zest, and finely chopped garlic. Drizzle with olive oil and mix well. Bake in the oven, stirring occasionally, until the vegetables are soft, about 45 minutes.

Step 3

Increase the temperature to 445°F.

Step 4

Add the sliced olives and rosemary to the vegetables. Season with salt and pepper.

Step 5

Cut the fish into 4 portions. Place on top of the vegetables and sprinkle with the vegetables.

Step 6

Return to the oven for 10–15 minutes until the fish is cooked through.
