Description

This is my first recipe here, so I decided to share one of my favorite dishes. Salmon, in my opinion, is the most delicious and easiest fish to prepare.

Ingredients

  • Lime 2 pieces
  • Mint 1 bunch
  • Salt a pinch
  • Ground Black Pepper a pinch
  • Pineapple 1 piece
  • Olive Oil to taste
  • Smoked haddock fillet 20 oz
  • Sweet Red Onion 1 head

Step-by-Step Guide

Step 1

Wash the fish and dry it with a paper towel, cut it if necessary, and place it in a glass dish. Squeeze the juice of half a lime on top, drizzle with olive oil (not too much, as salmon is already a fatty fish), season with salt and pepper to taste, tear the mint leaves (BY THE WAY, you can use basil instead of mint — depending on what you have on hand), and you can also use your favorite fish spices.

Step 2

Next, preheat the oven to 355°F (not higher, or the fish will dry out), while it heats, let the fish marinate. Leave it in the oven for 15–20 minutes.

Step 3

The next step, while the fish is cooking, is to finely chop half of the onion; if it's small, you can use the whole thing. We will need a fresh, small pineapple, but if you don't have one, you can use canned, though fresh is much tastier! Cut it into cubes no larger than 1 cm, finely chop the mint leaves, discarding the stems.

Step 4

Mix all the chopped ingredients, season with salt and pepper to taste, squeeze the juice of 1 lime, and drizzle with olive oil. Ideally, it should be refrigerated and served chilled.

Step 5

Transfer the cooked fish to plates, top with the cool salsa, and serve with chilled white wine.
