Baked Salmon with Leeks

Ingredients

  • Leek 45 oz
  • Olive Oil 2 tablespoons
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Smoked haddock fillet 25 oz
  • Lemon 1 piece

Step-by-Step Guide

Step 1

Preheat the oven to 445°F.

Step 2

Trim the dark green leaves and roots from the leeks. Cut the remaining parts lengthwise into 4 pieces, then cut each piece in half crosswise. Place on a baking sheet and toss with olive oil. Season with salt and pepper and bake in the oven for 12–15 minutes until the leeks are slightly tender.

Step 3

Remove the baking sheet from the oven and stir, pushing the leeks to the edge. Place the salmon fillet, cut into large pieces, in the center, and season with salt and pepper.

Step 4

Return to the oven for 10–15 minutes until the fish is cooked through.

Step 5

Serve the fish with leeks and lemon wedges.
