Baked Royal Sturgeon
Ingredients
- Sturgeon 1 piece
- Dill 2 bunches
- Ocean salt to taste
- Olive Oil 4 tablespoons
- Kalamata olives 5 pieces
- Lemon 2 pieces
- Physalis 1 piece
Step-by-Step Guide
Step 1
Rub the washed and dried sturgeon with olive oil.
Step 2
Make a cut along the belly down to the backbone, season with salt, and stuff with lemon slices (1 piece) and dill (1 large bunch).
Step 3
Place on a greased baking tray in a semicircle. Make small cuts on the back for portioning. Insert lemon slices (0.5 lemon) into the cuts.
Step 4
Bake in the oven at 390°F until cooked through (cooking times vary for fish of different sizes). My sturgeon took about an hour.
Step 5
After removing the sturgeon, place it on a bed of dill, insert an olive in its mouth, and use olives for the eyes as well. Place the physalis on the head as a crown. Serve with lemon!
