Baked Potatoes with Green Garlic Sauce
Ingredients
- Salad Potatoes 6 pieces
- Herbs 1 bunch
- Garlic 4 cloves
- Olive Oil 5 fl oz
- Coarse Salt to taste
- Fresh Mint to taste
- Marinated cherries 15 pieces
Step-by-Step Guide
Step 1
Boil the whole potatoes in their skins for 10 minutes.
Step 2
In the meantime, crush the herbs and garlic in a mortar and pour in the olive oil.
Step 3
Cut the potatoes lengthwise, sprinkle with coarse salt, and place them in a preheated oven at 430°F (grill) for 15-20 minutes, until a crust forms.
Step 4
On large plates, arrange the cherry tomatoes, place the baked potatoes among them, and drizzle with the sauce. Top with finely chopped mint.
