  • Potatoes 5 pieces
  • Carrots 3 pieces
  • Zucchini 2 pieces
  • Onion 1 head
  • Dried thyme to taste
  • Vegetable Oil to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Wash and peel the vegetables (you can leave the skin on the zucchini). Cut the potatoes, carrots, and zucchini into large pieces. Finely chop the onion.

Step 2

Place the prepared vegetables in a baking dish. In a separate bowl, thoroughly mix the pepper, salt, and thyme (or other dried herbs) with vegetable oil. Pour the dressing over the vegetables, mix well, and let it sit for a couple of minutes.

Step 3

Put the dish in the oven for 20 minutes, then take it out and stir the vegetables again, returning it to the oven for another 20 minutes (approximately). Keep an eye on the vegetables to ensure they do not burn; you may need to add a little more oil. When the dish is ready, the vegetables will be soft and easily pierced with a fork—it's time to take them out of the oven.
