Baked Potato with Egg
Ingredients
- Potato 2 pieces
- Scallions 2 stalks
- Chorizo 2 pieces
- Cheshire Cheese 5 oz
- Chicken Egg 2 pieces
Step-by-Step Guide
Step 1
Pierce the skin of the potatoes in several places with the tip of a knife. Place in the microwave on high power for 10 minutes. Cut in half lengthwise, place cut side up on a microwave-safe plate, and slightly mash the flesh with a fork.
Step 2
Prepare the filling. Sprinkle the potatoes with chopped green onion, chorizo, and cheese. Season to taste. Bake on high power for 2–3 minutes.
Step 3
Crack the eggs into ceramic ramekins (or other microwave-safe containers). Puncture the yolks and microwave in intervals of 40 seconds. Remove from the microwave, let sit for 10 seconds, then continue microwaving in 10-second intervals until done (all microwaves vary, and if overcooked, the eggs may explode). Transfer the eggs onto the potatoes and serve.
