Ingredients

  • Pork Blood 1½ kg
  • Garlic 5 cloves
  • Oranges 4 pieces
  • Lemon 1 piece
  • Honey 2 spoons
  • Salt to taste
  • Herbes de Provence 3 spoons
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Prepare the meat and place it in a bowl. Peel the garlic, chop 2 cloves and add them to the meat, then crush the remaining 3 cloves and place them in a small container.

Step 2

Use a spiral peeler to remove the skin from 2 oranges, and slice 1 orange into rounds. Squeeze the juice from 3 oranges and 1 lemon, and pour it over the meat. Let it marinate for 1 to 2 hours, turning occasionally. The longer the meat marinates, the more tender it will become.

Step 3

Preheat the oven to 390°F. In a small bowl, combine the garlic with honey and Provençal herbs, and mix well. Remove the meat from the marinade, season with salt and pepper, and coat it with the honey-garlic mixture.

Step 4

Place the meat in a baking dish and put it in the oven, occasionally basting it with the remaining marinade. The cooking time is about 1 hour and 40 minutes. Approximately 20 minutes before it’s done, cover the meat with orange slices and zest.
