Ingredients

  • Butter 3 tablespoons
  • Pork Blood 5 lbs
  • Turnips 20 oz
  • Meyer Lemon Juice 3 tablespoons
  • Hazelnut 0 oz
  • White bread 1 piece
  • Parsley 4 stems
  • Mustard Greens 1.5 tablespoons
  • Honey 1 tablespoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 345°F. Grease a baking dish or deep tray with butter. Rinse the pork, pat it dry, and bake in the oven for 1 hour and 30 minutes.

Step 2

Peel, wash, and slice the carrots into rounds, then sauté them in 1 tablespoon of butter. Season with salt and pepper. Add 5 tablespoons of water and lemon juice. Cover and simmer on low heat for 8–10 minutes.

Step 3

Chop the nuts. Crumble the bread. Wash the herbs, shake off excess water, and chop finely. Mix the bread, nuts, and herbs with mustard, honey, and 2 tablespoons of butter. About 15 minutes before the meat is done, spread this mixture on top of the pork to create a delicious nut crust.

Step 4

Remove the pork from the oven and slice it into pieces. Serve with the carrots and mashed potatoes.
