Ingredients

  • Tomatoes 2 pieces
  • Pork tenderloin 20 oz
  • Pitted Wild Apricots 5 oz
  • Soy Sauce to taste
  • Mustard Greens to taste
  • Salt a pinch

Step-by-Step Guide

Step 1

Mix the soy sauce with the mustard.

Step 2

Rinse the tenderloin and make incisions.

Step 3

Generously pour the sauce over the tenderloin and let it marinate in the refrigerator for 1 hour.

Step 4

Wash the tomatoes and slice them into rounds. If the tomatoes are large, you can cut them in half.

Step 5

Wash the prunes, cut them partially in half, and spread them open like a butterfly.

Step 6

Insert a slice of tomato and a prune into the incisions in the tenderloin.

Step 7

Lightly sprinkle with salt and pepper to taste.

Step 8

Carefully place the tenderloin in a baking bag. Seal the bag tightly.

Step 9

Place in a preheated oven at 355°F for 1.5 hours.
