Description

If you don't have a suitable baking dish, you can use foil. The sheet should be larger than the baking tray so that you can fold it neatly and cover the meat on top (twice as large). The edges of the sheet should be folded vertically by 1.5 cm to prevent the marinade from spilling onto the tray. You can also use the juice of 2 lemons instead of vinegar.

Ingredients

  • Salt 3 teaspoons
  • Ground Black Pepper 2 teaspoons
  • Onion 2 pieces
  • Pork Skewers 5 lbs
  • 9% Vinegar 1 teaspoon
  • Grill Meat Spice Blend 2 teaspoons

Step-by-Step Guide

Step 1

Cut the pork ribs into pieces so that each piece contains three bones. On the side of the ribs where there is more meat, make shallow cuts along the piece.

Step 2

Prepare the marinade. In a cup (200 ml), place salt, black pepper, meat seasoning 'Shashlik' or a pinch of spices from its composition: coriander, red pepper, sugar, marjoram, white mustard, juniper, bay leaf (1-2 leaves), garlic (if you don't have dried, use 1 chopped clove), and vinegar. Pour in prepared water (however you prefer: boiled and cooled, simply filtered, or bottled).

Step 3

In a large bowl or pot, place the cut pieces of ribs. Pour the marinade over them. Gently knead each piece to ensure the marinade thoroughly penetrates the meat fibers. Add the onion, sliced into rings. Leave for 1 hour to marinate the meat.

Step 4

In a baking dish with high sides, place the meat and pour the remaining marinade over it. If the meat has fully absorbed the marinade, add 1/4 cup of water. Cover with a lid or a sheet of foil. Bake the meat at 355°F for 1 hour.
