Ingredients
- Navy Pollock 25 oz
- Fingerling Potatoes 10 oz
- Broccoli 10 oz
- Marinated cherries 10 oz
- Lemon ½ pieces
- Garlic 2 cloves
- Thyme 3 sprigs
- Olive Oil 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients. Preheat the oven to 390°F.
Step 2
Cut the broccoli into florets.
Step 3
In a pot, bring salted water to a boil, add the potatoes, and cook for 5 minutes.
Step 4
Add the broccoli to the potatoes and cook for another minute. Then drain the water.
Step 5
Rub the fish with vegetable oil, salt, and pepper.
Step 6
Place the fish and prepared vegetables on a baking sheet.
Step 7
Place the cherry tomatoes, garlic, and thyme nearby.
Step 8
Drizzle everything with olive oil.
Step 9
Bake in the oven for 15–20 minutes.
Step 10
Serve the cod with vegetables and a wedge of lemon.
