Ingredients
- Cornmeal 10 oz
- Water 0 qt
- Extra virgin olive oil 1 tablespoon
- Salt to taste
Step-by-Step Guide
Step 1
First, prepare the polenta by heating the water and oil in a pot. Before the water starts to boil, gradually add the cornmeal while constantly stirring the mixture with a wooden spoon. Add salt.
Step 2
Continue stirring and cook the polenta over low heat for about 30–40 minutes. When the mixture has thickened and starts to pull away from the sides of the pot, you can turn off the heat.
Step 3
While the polenta is still hot, spread it onto a baking sheet lined with parchment paper, and cover it with another sheet to roll it out to a thickness of 0.5–1 cm. Allow it to cool to room temperature and cut it into squares. Then transfer them to a baking tray lined with parchment paper.
Step 4
Place the polenta squares in an oven preheated to 390°F. Bake for 10–15 minutes on each side until they become crispy on the outside.
Step 5
This type of polenta can be served as an appetizer with tomato sauce or as a substitute for bread with a vegetable salad.
