Ingredients

  • Sweet Pepper 2 pieces
  • Spinach 5 oz
  • Garlic 2 cloves
  • Pistachios 0 oz
  • Olive Oil 1 tablespoon
  • Fresh basil leaves ⅓ spoons
  • Meyer Lemon Juice 1 tablespoon
  • Grated Pecorino Pepato Cheese 5 oz

Step-by-Step Guide

Step 1

Wash the peppers and cut them in half. Remove the seeds and let them dry.

Step 2

In a skillet, heat the olive oil. Add the rinsed, dried (stems removed), and roughly torn spinach to the skillet and sauté covered over medium heat for 1-2 minutes. Remove the lid and sauté for another 2 minutes until all the water has evaporated. Add a little salt.

Step 3

In a blender, blend the parsley, pine nuts or cashews, 1 teaspoon of olive oil, lemon juice, grated Parmesan, and garlic. Blend until you achieve a smooth consistency (if it doesn't blend well, add a little water).

Step 4

Mix together the spinach and the green mixture resembling pesto.

Step 5

Stuff the peppers with the green filling and place them in a preheated oven at 390°F for 15 minutes.

Step 6

Serve hot, garnished with herbs and pine nuts.
