  • Orange Bell Peppers 4 pieces
  • Feta cheese 10 oz
  • Oyster Mushrooms 10 oz
  • Arugula 1 bunch
  • Olive Oil 3 tablespoons
  • Ground Black Pepper to taste
  • Balsamic Vinegar 1 tablespoon

Step-by-Step Guide

Step 1

Wash the peppers, make cuts along them, and carefully remove the seeds under running water, then dry the peppers.

Step 2

Thoroughly rinse the mushrooms, remove the tough part of the stems, and chop finely.

Step 3

In a skillet, heat 2 tablespoons of olive oil and sauté the mushrooms, stirring, until golden brown.

Step 4

Mash the feta cheese with a fork (if you use a hard type of feta, grate it). Chop the arugula.

Step 5

In a bowl, mix the feta cheese, arugula, and sautéed mushrooms, seasoning with black pepper to taste.

Step 6

Stuff the peppers with the mixture (I had enough filling left for one more pepper, resulting in 5 stuffed peppers—3 large and 2 small).

Step 7

Line a baking dish with foil or parchment paper.

Step 8

Brush the peppers with olive oil, place them in the dish, and put them in a preheated oven at 390°F for 1 hour (until the skin puffs up). During the hour, gently turn the peppers several times to ensure even baking.

Step 9

Serve the peppers hot, drizzled with balsamic vinegar.
