- Langoustines 2 pieces
- Béchamel sauce to taste
- Butter 0 oz
- Tarragon 1 stalk

Step 1
Boil small langoustines, about the size of a medium crab, cut them in half lengthwise, place them in a saucepan or skillet cut side up, drizzle the cut surface with béchamel sauce, and bake in the oven.
Step 2
Serve cold.
Step 3
Place the cooked langoustine on a plate cut side up, add a few pieces of butter on the meat, and garnish with a small sprig of tarragon.
