Baked halibut with beet salsa
Ingredients
- Halibut 1½ kg
- Beetroot 5 oz
- Scallions 8 stalks
- Mild Chili Spice 1 piece
- Fresh Mint 2 spoons
- Meyer Lemon Juice 0 fl oz
- Olive Oil 5 fl oz
- Butter 0 oz
- Wheat Flour 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the beetroot, peel it, and cut it into small cubes. Add chopped onion, deseeded and finely chopped chili pepper, and mint. Drizzle with olive oil and lemon juice, and mix well. Season with salt and pepper to taste.
Step 2
Lightly dust the halibut fillet with flour, season with salt and pepper. In a large skillet, melt the butter and sauté the fish on each side until semi-soft, about three to four minutes. Serve with beet salsa.
