
Baked Halibut with Avocado and Pine Nuts

Description
Pine nuts can easily be replaced with cashews.
Ingredients
- Halibut 5 lbs
- Avocado 1 piece
- Butter 5 oz
- Pistachios 5 oz
- Garlic 5 cloves
- Parsley 1 bunch
- Salt a pinch
Step-by-Step Guide
Step 1
Prepare the halibut. Clean the white side and remove the skin from the dark side.
Step 2
Prepare the spread. Peel the avocado, mash the garlic, sauté and chop the nuts, and finely chop the parsley (without stems!!!), you can use a blender. Mix all ingredients with butter and salt (10 grams) using a fork.
Step 3
Lightly grease a baking sheet with oil, sprinkle with salt, place the fish skin side down, and sprinkle with salt. Cover the halibut with a thick layer of the spread without gaps. Bake in the oven at 355°F for 30 minutes.
Step 4
For serving, divide into portions with a spoon across the fish into long rectangles, serve with any type of potato.
