Baked Eggplants
Ingredients
- Eggplants 4 pieces
- Olive Oil 6 tablespoons
- Paprika to taste
- Ground Cumin to taste
- Salt to taste

Step 1
Preheat the oven to maximum.
Step 2
Wash the eggplants, but do not peel. Cut them in half lengthwise (if they are very long, cut them in half again crosswise; if they are very thick, you can cut them into 3 lengthwise).
Step 3
Place the eggplants on a baking sheet lined with parchment paper, flesh side down.
Step 4
Pour the oil into a bowl, add the spices, and mix. Brush this mixture over the surface of the eggplants.
Step 5
Bake for 30 minutes.
