
Baked Cod with Sauce

Description
You can use another type of cheese instead of mozzarella. I’ve also made it with Parmesan, and it turned out just as well.
Ingredients
- Cod 30 oz
- Orange Bell Peppers 1½ pieces
- Tomatoes 3 pieces
- Onion 1 piece
- Garlic 1 clove
- Meyer Lemon Juice to taste
- Melted Cheese 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the tomatoes. Use a vegetable peeler to remove the skin from the peppers. Peel the onion and cut it into quarters. Peel the garlic.
Step 2
Place all the vegetables in a blender and puree until smooth. Season with salt and pepper to taste.
Step 3
Place the cod in a baking dish with high sides, lined with foil. Season the fish with salt and pepper, lightly sprinkle with your favorite herbs, and drizzle a little lemon juice over it.
Step 4
Pour the vegetable sauce over the fish, and crumble mozzarella on top.
Step 5
Bake for 25–30 minutes at 355°F.
