Description

You can make tapenade at home by blending olives with garlic, anchovies, capers, lemon juice, salt, and pepper. Instead of pancetta, you can use bacon. Serve the chicken with toasted slices of ciabatta.

Ingredients

  • Chicken fillet 4 pieces
  • Tapenade 4 tablespoons
  • Garlic 2 cloves
  • Marinated cherries 10 oz
  • Dry White Wine 5 fl oz
  • Olive Oil 2 tablespoons
  • Pancetta 8 pieces
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 430°F. Make several slits in each chicken breast.

Step 2

Stuff the slits in the chicken breasts with tapenade.

Step 3

Wrap each breast with two strips of pancetta.

Step 4

Place the chicken breasts in a baking dish, add finely chopped garlic and halved cherry tomatoes.

Step 5

Season with salt and pepper to taste. Add wine and olive oil.

Step 6

Bake for about 20 minutes.
