Ingredients
- Skin-On Chicken Breasts 1 piece
- Farm fresh eggs 2 pieces
- Wheat Flour 5 oz
- Shallot 1 head
- Garlic 1 clove
- Marinated cherries 6 pieces
- Fresh basil leaves to taste
- Parmesan Cheese 5 oz
- Melted Cheese 5 oz
- Olive Oil to taste
- Salt to taste
Step-by-Step Guide
Step 1
Crack the eggs and lightly beat them. Add salt to the flour. Cut the chicken breast lengthwise to create a thin 'butterfly'. Dredge the breast in flour, shaking off the excess. Then dip it in the egg and again in the flour. In a preheated skillet, pour in olive oil and place the breast. Fry on both sides until golden brown.
Step 2
For the sauce, cut the cherry tomatoes in half, chop the shallot, garlic, and basil leaves. Sauté in olive oil in a skillet for 3 minutes.
Step 3
Place the chicken breast on a baking sheet. Top with the sauce. Slice the mozzarella into thin pieces and grate the parmesan. Layer the mozzarella on top of the sauce and sprinkle with parmesan. Place in a preheated oven at 355°F and bake for 8 minutes. Serve with a side dish.
