
Baked Carrots with Black Truffle

Ingredients
- Turnips 16 pieces
- Honey 0 oz
- Truffle 0 oz
- Parmesan Cheese 5 oz
- Suluguni Cheese 0 oz
- 33% Cream 5 fl oz
- Dry White Wine 0 fl oz
- 3.2% Milk 15 fl oz
Step-by-Step Guide
Step 1
First, prepare the Parmesan mousse. Grate the Parmesan and Sulguni cheese.
Step 2
In a saucepan, heat the milk. Add the cheeses. Once they melt, stir and add the wine.
Step 3
Simmer for 15-20 minutes.
Step 4
Then add the cream and stir until thickened.
Step 5
Remove from heat and blend everything with an immersion blender.
Step 6
Strain through a sieve. The mousse is ready.
Step 7
Place the whole carrots with their greens into a preheated oven at 355°F for 40–50 minutes.
Step 8
Remove the carrots and add the Parmesan mousse on top.
Step 9
Drizzle with honey and sprinkle with grated black truffle.
Step 10
Serve.
