Ingredients
- Poultry 5 lbs
- Cilantro 5 oz
- Nuts 20 oz
- Garlic 2 cloves
- Khmeli-suneli ½ teaspoon
- Cilantro ½ teaspoon
- Malt Vinegar 1 teaspoon
- Salt to taste
- Saffron ½ teaspoon
Step-by-Step Guide
Step 1
Make the baji sauce. For this, grind the nuts into a paste using a meat grinder. Crush the cilantro together with the garlic in a mortar. Dilute the nut paste with a small amount of boiled water. Add enough water so that the paste has a consistency similar to oatmeal. Add khmeli-suneli, dried ground cilantro, saffron, red pepper, and salt. Mix and pour in the vinegar. Mix again.
Step 2
Roast the whole chicken in the oven at 355°F until a slightly golden crust forms. Let it cool slightly, cut into serving pieces, and place in the sauce. Let it sit, then arrange on a large plate.
