Bacon-wrapped mackerel
Ingredients
- Canned Mackerel in Oil 6 pieces
- Bacon 24 pieces
- Potato 30 oz
- Rosemary 4 stalks
- Butter 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Wash the potatoes and boil them in salted water for 20 minutes.
Step 2
Meanwhile, clean the mackerel. Rinse it under cold water and pat it dry with a paper towel. Season the inside and outside with salt and pepper.
Step 3
In a saucepan, bring the cream to a boil and reduce the heat to simmer for 6–8 minutes. Add pieces of butter, 1 tablespoon of freshly ground black pepper, and a pinch of salt. Cook for about 1 more minute. Blend the sauce with an immersion blender and keep warm.
Step 4
Wrap each mackerel with 4 slices of bacon.
Step 5
Drain the water from the potatoes.
Step 6
Light the fire under the barbecue. Arrange the mackerel wrapped in bacon and the potatoes on the grill. Sprinkle with chopped rosemary sprigs to infuse the potatoes and mackerel with their aroma. Grill the mackerel for 10 minutes on each side.
Step 7
Serve immediately, plating the mackerel and potatoes, and drizzling everything with the creamy pepper sauce.
