Ingredients
- Chicken fillet 2 pieces
- Salted pork belly 6 pieces
- Sour Cream 2 spoons
- Camembert cheese 0 oz
- Garlic 3 cloves
- Grated Pecorino Pepato Cheese 1 tablespoon
- Chopped Sage Leaves 1 tablespoon
- New Potatoes 6 pieces
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Wash the potatoes. Cut each potato in half. Place the halves in a baking dish. To achieve a golden color, drizzle them with vegetable oil.
Step 2
Place the potatoes in a preheated oven at 355°F.
Step 3
Make a slit in each half of the chicken breasts to create a pocket. Then, fill the pocket with the stuffing.
Step 4
Season the chicken breasts with salt and pepper, and set aside.
Step 5
Grate the cheese. I had two types: a hard cheese with black truffle and Camembert with mold, but I think any other types would work as well.
Step 6
Chop the herbs and garlic.
Step 7
Combine grated cheese, chopped herbs, garlic, and thick country-style sour cream. The filling is ready.
Step 8
Stuff the chicken breasts with the filling. Wrap them in slices of bacon or pancetta. Season with pepper on top.
Step 9
Tie the rolls with kitchen twine or secure them with toothpicks.
Step 10
Remove the potatoes from the oven. Place the rolls on top of the potatoes. Bake at 355°F for 30 minutes.
