Description

You can substitute kefir with sour milk or buttermilk (it is important that the product is fresh), and the baking soda should not be old.

  • Kefir 10 fl oz

  • Lamb 35 oz
  • Garlic to taste
  • Herbs to taste

Step-by-Step Guide

Step 1

Start boiling the lamb, season the broth with salt and spices to taste.

While the meat is cooking, prepare the dough: mix the flour with baking soda and salt,

add the kefir and knead the dough well; it should not be too stiff.

Step 4

Cover the dough and let it rest for one hour.

Step 5

Then roll out to a thickness of 1 cm and cut into diamonds slightly smaller than a matchbox.

Remove the cooked meat from the broth.

Also, leave about a cup of broth for the sauce.

In the boiling broth, add the pieces of dough, stir, and set a timer for 4 minutes.

Reduce the heat to medium.

After four minutes, you need to quickly remove the dough and pierce each piece through with a fork; this is important, otherwise the khinkal will deflate and turn blue. For practice, you can boil the dough in batches instead of all at once.

In the hot broth, crush the garlic and finely chop the herbs, cut the meat into pieces.
