Autumn Stew with Beans and Pumpkin
Ingredients
- Pumpkin 15 oz
- Olive Oil 2 tablespoons
- Zucchini 10 oz
- Canned Corn 5 oz
- Canned White Beans 15 oz
- Fresh Thyme 2 teaspoons
- Salt to taste
- Ground Black Pepper to taste
- Lemon Juice 2 tablespoons
Step-by-Step Guide
Step 1
Steam or boil the pumpkin until soft.
Step 2
Heat 1 tablespoon of oil in a large skillet or saucepan over medium heat. Add the zucchini and corn. Cook for 5-6 minutes until the zucchini is soft. Mix with the pumpkin, herbs, and lemon juice. Add the remaining tablespoon of oil.
Step 3
Taste the stew and season with salt and pepper to taste. Serve with cooked grains or toast.
