- Canned White Asparagus 0 lbs
- Sugar ½ teaspoon
- Table Mustard ½ teaspoon
- Butter 1 teaspoon
- Meyer Lemon Juice 1 teaspoon
- Salmon 20 oz
- Clarified Butter 1 tablespoon
- Onion 1 head
- Olive Oil 5 tablespoons
- Soy Sauce to taste
- Champagne Vinegar 3 tablespoons
- Herbs 1 bunch
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the asparagus and boil it in salted water for 15 minutes, adding sugar and butter.
Step 2
Cut the salmon into 2 cm cubes and fry in clarified butter over medium heat until a crust forms. Season with salt and pepper.
Step 3
Dice the onion. Whisk together olive oil, vinegar, lemon juice, soy sauce, mustard, salt, and pepper. Add chopped herbs and onion.
Step 4
Remove the asparagus from the broth and arrange it on plates along with the pieces of salmon. Drizzle with the sauce.
Step 5
Serve with potatoes as a side dish.
