  • Jasmine Rice 10 oz
  • Poultry 0 lbs
  • Salt 2 teaspoons
  • Apple Wine 1 tablespoon
  • Egg white 1 piece
  • Potato protein 1½ tablespoons
  • Vegetable Oil 1 teaspoon

Step-by-Step Guide

Step 1

Soak the Thai sticky rice in water and leave for 2 hours to swell properly.

Step 2

Cut the 1 kg chicken into 4 pieces, remove the skin and bones. Cut the fillet into strips 2.5 cm long and marinate for 5 minutes in a mixture of wine (or sherry) and salt.

Step 3

Mix the egg white with the starch, and place the rice on a plate. Dip the fillet pieces in the egg and starch mixture, then coat them in the rice, draining any excess water beforehand (but do not dry it).

Step 4

Preheat the oven to 355°F, place the fillet pieces in a greased dish, cover with foil, and place in the oven in a water bath for 40 minutes.
