Asian-Style Barbecue Marinated Chicken

  • Brown Sugar ¼ cup
  • Soy Sauce ¼ cup
  • Chili Flakes ½ teaspoon
  • Lime Juice 1 tablespoon
  • Red Curry Powder ¼ teaspoon
  • Garlic 3 cloves
  • Chicken Thighs 8 pieces
  • Lime 2 pieces
  • Scallions to taste
  • Vegetable Oil to taste

Step-by-Step Guide

Step 1

In a bowl, mix together the sugar, soy sauce, lime juice, red pepper flakes, curry powder, and minced garlic. Stir well and pour into a bag. Add the chicken and seal the bag tightly. Mix and refrigerate for at least 4 hours, preferably overnight.

Preheat the grill.

Step 3

Remove the chicken from the marinade. Pour the marinade into a saucepan and bring to a boil for 1 minute.

Step 4

Place the chicken on the grill, lightly drizzle with vegetable oil, and grill for 20 minutes, turning occasionally, or until cooked through. During cooking, baste with the marinade.

Step 5

Serve with lime wedges, garnished with green onion.
