Ingredients
- Cilantro 1 bunch
- Skin-On Chicken Breasts 1 piece
- Toasted Sesame 1 tablespoon
- Vegetable Oil 1 tablespoon
- Sesame Oil 1 tablespoon
- Spanish onions 1 piece
- Garlic 3 cloves
- Mild Chili Spice to taste
- Ground Cumin ½ tablespoon
- Fish Oil 1 tablespoon
- Salt to taste
Step-by-Step Guide
Step 1
Cut the chicken into small cubes, slice the onion into feathers, and finely chop the garlic and cilantro. Toast the sesame seeds in a dry skillet.
Step 2
Heat vegetable and sesame oil in a wok. Sauté the onion with garlic for 1 minute. Add the chicken breast, salt, cumin, finely chopped chili (or crushed in a mortar if dried), and stir-fry on high heat for 2–3 minutes until the chicken is cooked.
Step 3
Add the sesame seeds, fish sauce, and cilantro. Serve with boiled rice.
