Arugula and Tomato Salad with Fried Dough Pieces
Ingredients
- Olive Oil 1 cup
- Dried Rosemary 1 teaspoon
- Garlic 4 cloves
- Marinated cherries 15 oz
- Coarse Salt to taste
- Ground Black Pepper to taste
- Vegetable Oil 4 tablespoons
- Pizza Flour 1 piece
- Semolina 1 tablespoon
- Arugula 10 oz
Step-by-Step Guide
Step 1
Combine the oil, oregano, garlic, tomatoes, salt, and pepper in a bowl and set aside.
Step 2
Pour oil into the fryer to a depth of 5 cm. Heat to 180˚C. Sprinkle the dough with semolina and roll it out into a rectangle measuring 10x23 cm and about 0.8 cm thick. Cut the dough into strips measuring 1.5x5 cm. Fry the dough strips until golden brown for 3-4 minutes.
Step 3
Transfer to paper towels, then mix with the tomatoes and their juice, arugula, salt, and pepper. Plate and serve.
