Aromatic dorado with rosemary

Ingredients

  • Dorado 2 pieces
  • Lemon 1 piece
  • Rosemary ½ bunch
  • Fresh basil leaves a pinch
  • Ground Black Pepper to taste
  • Ocean salt to taste

Step-by-Step Guide

Step 1

Gut the fish, rinse, and clean it.

Step 2

Slice the lemon into rings — not too thick and not too thin.

Step 3

You can use fresh rosemary, but I always have my dried sprigs.

Step 4

Preheat the oven to 390°F.

Step 5

Line a baking tray with foil, leaving enough foil to wrap the fish like an envelope.

Step 6

Place the fish on the foil, previously coated with salt, pepper, and lemon juice. Place lemon slices and rosemary sprigs inside the belly.

Step 7

Wrap the fish well and place it in the oven.

Step 8

After 20–25 minutes, unwrap the fish and let it bake for another 7–10 minutes.
