Aromatic Chicken Broth
Ingredients
- Cornish Hen 1 piece
- Celery salt 1 piece
- Onion 1 head
- Carrot 1 piece
- Leek ½ piece
- Parsley ½ bunch
- Ginger 0 oz
- Bay leaf 2 pieces
- Green peppercorns 10 pieces
- Kaffir Lime Leaves 1 piece
- Olive Oil 0 fl oz
- Salt to taste
Step-by-Step Guide
Step 1
Peel and roughly chop the onion, ginger, and carrot. Use a vegetable peeler to remove the thin outer layer of the celery stalk and chop it as well. Chop the white part of the leek.
Step 2
In a large pot, heat the olive oil and add the vegetables. Stir well with a spatula and cook for about 5-10 minutes, stirring constantly until the vegetables are browned.
Step 3
Wash the hen thoroughly and add it to the vegetables. Pour in enough water to completely cover the contents. Bring to a boil, reduce the heat, and add the parsley sprigs, bay leaves, kaffir lime leaf, and black peppercorns. Simmer for 30 minutes to 1 hour, constantly skimming off any foam that appears.
Step 4
Season with salt to taste at the very end. Strain the broth.
