  • Vegetable Oil 5 fl oz
  • Meyer Lemon Juice 0 fl oz
  • Honey 0 oz
  • Mustard Greens 0 oz
  • Garlic 8 cloves
  • Butter 10 oz
  • Fresh Rose Hips 1 bunch
  • Chopped Sage Leaves 1 bunch
  • Thyme 1 bunch
  • Spanish onions 2 pieces

Step-by-Step Guide

Step 1

Boil 3–4 liters of water with a large amount of salt (depending on the size of the turkey, the water should be 'sea-like'), a handful of fragrant black peppercorns, and cut lemon pieces. After cooling the water, place the turkey in a large container, pour in warm spiced water, and then add cold water until the turkey is fully submerged. Cover the container with plastic wrap and leave it in the refrigerator for 24 hours.

Step 2

After 24 hours, remove the turkey from the water, rinse, and pat dry. Mix vegetable oil, lemon juice, honey, mustard, and four minced garlic cloves. Rub the mixture over the turkey and fill the cavity with the remaining mixture. Place it in a container, cover with plastic wrap, and leave in the refrigerator for another 24 hours.

Step 3

Once the turkey has marinated, remove it from the refrigerator and drain the marinade. Mix softened butter with chopped fresh rosemary, sage, thyme, salt, and pepper. Using your fingers, tuck the butter mixture under the skin of the turkey breast. Stuff the turkey with fresh chopped onion, lemon, and garlic. Tie the legs. Roast in the oven at 355°F for 2–3 hours, until the turkey reaches an internal temperature of 160°F.

Step 4

After roasting, remove the baking tray with the turkey and cover it with foil for 15 minutes. Then serve.
