Ingredients

  • Butter 0 oz
  • Squid 0 lbs
  • Olive Oil 1 tablespoon
  • Shallot 3 pieces
  • Cognac 0 fl oz
  • Dry White Wine ¾ cup
  • Tomatoes 3 pieces
  • Passata Tomato Sauce 1 teaspoon
  • Sour Cream 1 tablespoon
  • Salt to taste
  • Ground Black Pepper to taste
  • Breadcrumbs 5 oz
  • Garlic 1 clove
  • Grated Pecorino Pepato Cheese 2 tablespoons

Step-by-Step Guide

Step 1

Clean and cut the squid into 3x3 cm squares.

Step 2

In a skillet over high heat, melt half of the butter and a little olive oil. Sauté the squid for two minutes, one minute on each side. Transfer the squid to a plate and set aside.

Step 3

In the same skillet, add the remaining butter and olive oil, and sauté the shallots until golden. Now return the squid to the skillet. Add the cognac and flambé. Add the white wine and bring to a boil, then add the tomato paste and tomatoes (peeled and seeded), seasoning to taste. Simmer for 2 minutes and pour in the sour cream.

Step 4

Mix the breadcrumbs, grated Parmesan, and minced garlic.

Step 5

Preheat the oven to 430°F. Place the squid in a baking dish and top with the breadcrumb mixture.

Step 6

Bake for 30–40 minutes until golden brown.
