Description

American Monkfish with Mashed Potatoes and Caraway

Ingredients

  • Potatoes 25 oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Butter 2 tablespoons
  • Milk 10 fl oz
  • Caraway 1 bunch
  • Olive Oil 3 tablespoons
  • Garlic 4 cloves
  • Monkfish 25 oz

Step-by-Step Guide

Step 1

Preheat the oven to 230°C. Place the potatoes in a pot of water. Salt generously. Cook the potatoes for about 15 minutes until tender. Drain the water and mash using a food processor, blender, or fork. Add the butter, milk, a few leaves of caraway, salt, and pepper to taste. Heat in the oven or microwave before serving.

Step 2

While the potatoes are cooking or immediately after they are done, place an oven-safe skillet over high heat. After a minute, add the garlic, oil, a few sprigs of caraway, and the fish fillets. Season with salt and pepper. Cook for 1 minute, then without flipping, place the fish in the oven.

Step 3

Bake until the fish is cooked through, 8-12 minutes depending on the thickness of the fish. When done, the fish should still be tender. If pierced with a thin knife, it will meet some resistance. Reheat the potatoes if necessary. Then serve the fish on top of the potatoes, browned side up. Garnish with caraway and potato cooking juice.
