Ingredients
- Pike 5 lbs
- Onion 2 heads
- Butter 10 oz
- Riesling 15 fl oz
- 33% Cream 15 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Clean the pike, gut it, remove the gills, wash it, season with salt and pepper, and refrigerate for 15-20 minutes. Finely chop the onion and mix it with the softened butter (the butter should be soft, not melted). Take a baking tray, grease it with a small amount of vegetable oil, and place the pike on it back side up (if you couldn't find one large fish, two smaller fish weighing about one kilogram each will work). Coat the back of the fish with the butter and onion mixture and place it in a preheated oven at 355°F for 15 minutes.
Step 2
Mix the Riesling and cream in a bowl and after 15 minutes add half of it to the fish. After another 15 minutes, add the remaining part, then cook the fish for another 45 minutes, periodically basting it with the juices that form. About every 10 minutes. 10 minutes before it's done, turn the oven to maximum.
Step 3
Serve with boiled potatoes and fresh herbs.
