Ingredients
- Ground coriander 1 bunch
- Beef 20 oz
- Passata Tomato Sauce 4 spoons
- Ground coriander 1 tablespoon
- Khmeli-suneli 1 tablespoon
- Red Long Chili Peppers a pinch
- Garlic 2 cloves
- Parsley 1 bunch
- Vegetable Oil 4 spoons
- Salt to taste
- Onion 5 heads
Step-by-Step Guide
Step 1
Buy high-quality beef with some fat, cut it into elongated pieces about five to seven centimeters long, rinse, and bring to a boil until fully cooked (cooking time greatly depends on the quality of the beef — from one to one and a half hours or more — just keep testing it).
Step 2
While the meat is cooking, chop the onions (4 onions) and sauté them well. Add tomato paste to the pan with the onions 5 minutes before turning off the heat. Stir occasionally.
Step 3
Once the meat is cooked, transfer it to a skillet with onions and tomato paste, and add enough broth from the pot where the beef was cooked to cover the meat.
Step 4
While the beef is simmering, prepare the herbs, garlic, and onion by slicing the onion into thin rings or pieces.
Step 5
Simmer the beef for half an hour. Five minutes before it's done, add the spices: ground coriander, khmeli-suneli, red pepper, and salt. Immediately toss in the herbs, thinly sliced onion, and garlic.
