Zucchini with Mashed Potatoes
Ingredients

- Gruyère cheese 0 oz
- Egg white 1 piece
- Butter 0 oz
- Chicken Egg 1 piece
- Mashed Potatoes 5 oz
- Safflower Oil 10 fl oz
- Courgette 5 lbs
Step-by-Step Guide
Step 1
Peel the zucchini and slice them into thin rounds, sprinkle with salt, and place in a colander for 1 hour. Then rinse and let dry.
Step 2
Heat the sunflower oil in a skillet. Fry the zucchini in batches until golden brown, then transfer them to a plate using a slotted spoon.
Step 3
Prepare or reheat the mashed potatoes and mix in the egg yolk. Whip the egg whites and fold them into the mashed potatoes.
Step 4
Place half of the zucchini in a baking dish, layer the mashed potatoes on top, and cover with the remaining zucchini. Sprinkle with grated cheese and bake in a preheated oven at 390°F until the cheese is golden. Serve immediately.
