Zucchini, Tomato, and Paprika Pie
Ingredients
- Courgette 20 oz
- Onion 1 head
- Garlic 1 clove
- Paprika 1 teaspoon
- Farm fresh eggs 2 pieces
- Olive Oil 3 tablespoons
- Baking Powder 5 oz
- Baking Powder ½ teaspoon
- Tomatoes 2 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
In a bowl, mix the grated zucchini, finely chopped onion, and garlic.
Step 3
In a small bowl, lightly beat the eggs, paprika, and 2 tablespoons of olive oil, season with salt and pepper, and add the flour and baking powder. Mix well to form a soft dough.
Step 4
Combine the dough with the zucchini mixture.
Step 5
Heat a 20 cm diameter skillet over medium heat and add the remaining oil. Pour the dough into the skillet and arrange the sliced tomatoes on top. Cook for 5-6 minutes, then transfer to the oven and bake for another 1 hour until golden brown.
Step 6
Carefully remove from the pan and transfer to a serving dish. Serve hot.
