Zucchini Sauté with Almonds
Ingredients
- Olive Oil 2 tablespoons
- Chopped almonds 2 tablespoons
- Courgette 2 pieces
- Salt to taste
- Ground Black Pepper to taste
- Grated Pecorino Pepato Cheese to taste
Step-by-Step Guide
Step 1
In a skillet, heat the olive oil over high heat, but do not let it smoke. Add the almonds and cook, stirring, for about 1-2 minutes until golden brown.
Step 2
Using a mandoline, slice the zucchini into thin strips and add to the skillet. Stir for 1 minute. Quickly season with salt and pepper and serve immediately. Optionally, sprinkle with cheese.
