
Zucchini Rolls with Homemade Yogurt Cheese

Ingredients
- Ground Black Pepper to taste
- Salt to taste
- Parsley 5 oz
- Lemon ½ pieces
- Garlic 1 clove
- Mild Chili Spice 1 piece
- Olive Oil 2 spoons
- Scallions 0 oz
- Courgette 1 piece
- Mint 0 oz
- Homemade Cheese 15 oz
Step-by-Step Guide
Step 1
Finely chop the herbs and chili pepper, and grate the garlic. Add them along with the lemon zest to the cheese and mix well.
Step 2
Slice the zucchini into thin ribbons using a vegetable peeler and lightly marinate them — drizzle with olive oil, season with salt and pepper.
Step 3
After fifteen minutes, when the strips have softened, proceed as follows: place a teaspoon of yogurt cheese at the end (leaving about 1.5 cm from the edge) and tightly roll the sushi.
