Step-by-Step Guide
Step 1
Grate the zucchini into thin wide noodles using a grater or a mandoline. Combine olive oil with crushed garlic, lemon juice, lemon zest, salt, and freshly ground black pepper. Rinse the capers to remove the brine, and shred the Parmesan into large flakes.
Step 2
