Zucchini Pie
Ingredients
- Courgette 4 pieces
- Sugar 1¼ cups
- Ground Cinnamon 1½ teaspoons
- Cream of tartar 1½ teaspoons
- Ground Nutmeg 1 teaspoon
- Wheat Flour 3 tablespoons
- Meyer Lemon Juice 2 tablespoons
- Salt a pinch
- Butter 2 tablespoons
- Shortcrust Cake Mix 20 oz
Step-by-Step Guide
Step 1
Thinly slice the zucchini into rounds and boil in boiling water until soft. Drain.
Step 2
In a bowl, mix the flour, sugar, cinnamon, cream of tartar, and nutmeg. Add the lemon juice, zucchini, and salt, and mix well (the mixture may seem runny, but that's how it should be).
Step 3
Preheat the oven to 390°F.
Step 4
Place half of the pastry in a baking dish and press down firmly. Trim any excess and fill with the filling. Top with pieces of butter and cover with the second half of the pastry. Seal well and bake for 40 minutes.
